Michael Ayoub's, formerly of Cucina, newly opened "Fornino" is the spot on Bedford Ave in Williamsburg, Brooklyn. Fornino or "little oven" serves wood-burning oven pizza. For some chefs, making their own pizza sauce is a big deal but for Michael Ayoub takes pride in the ingredients and toppings. Toppings are simple and fresh, plucked from the chef's own garden and greenhouse. He also buys locally from small farms and sourcing artisinal cheese.

The Scene
The glow from the restaurant's wood-burning oven carries a warm welcome to the unpretentious neighborhood crowd. The narrow front room lined with wooden tables opens into an indoor/outdoor back dining room, overlooking potted herbs that top the pies. Unfortunately, the uninformed service doesn't honor the carefully selected ingredients (organic flour, artisanal cheese and local produce).

The Food
Though pizza reigns supreme, the starter of clams baked in a tangy broth of capers, lemon, garlic and herbs is a lovely diversion. Generous toppings grace the more than 20 pies, organized by first, second and third generation. Even on the classic, normally spare, margherita, the rich mozzarella nearly overpowers the sweet tomato sauce; yet the richness is addicting. The thin crust, charred black around the edges, adds a smokey dimension, which pulls together the oddball Salsiccia Di Agnello, with lamb sausage, two cheeses and pistachios. Save room for the light tiramisu.

As a fan of traditional/authentic italian pizza, I was a bit dubious of a place called "the Art and Science of pizza (all the more that I heard bad comments about the so-called "attitude" of the staff). The pizzas are just awesome. Thin Crust. Delicious tomato sauce and the freshest ingredients. Ive tried many different pizzas (take-out) and Ive never been disappointed. Im definitely converted.

Pizza was cooked too fast. Chared outer crust and a cold, undercooked inner crust. Besides that it was tastey. I dont think they deserve the 2nd spot. sorry.
